As I curl up on this gorgeous sunday morning with my cozy blanket and cup of Joe, I thought I would share another one of my amazing husbands recipes. He came up with this and has perfected it over the years. I love it because it is super easy and quick. Perfect for a weeknight.
Easy Chicken Enchiladas
4 Cooked Chicken Breast Diced
Enchilada Sauce (Green)
Directions: Preheat oven 350 degrees. Microwave cream cheese, just until softened. Stir in Seasoning, 1/2 cup salsa, and chopped chicken. microwave again so the flavors mingle. Spoon into Tortillas and roll up, lay in pan. Top with green enchilada sauce and cheese. Bake until Cheese is melted. Viola you are done!!

Yep, classic ramen noodles. Hey we all have those days. A trick I figured out years ago when my child was going through a really picky phase, make it fun. Sometimes I throw a blanket on the floor our in the lawn and we have a picnic, play games like Guess Who during dinner, or a family movie night with dinner served in front of the TV. Usually we are eat at the table with no toys or distractions so all of these are a special treat and distract from the lack of fine food. Any kid friendly food or tricks you have learned?
